I like the fact that you are having a great time experimenting. Playing with your food the adult way. May I suggest a couple easy tweaks to come to the perfect crispy fried chicken. Use flour, season the flour with sea salt cracked black pepper garlic powder onion powder - be generous with the onion and garlic. Egg wash the chicken and flour the chicken using the ziplock bag technique. One of the most important things to notice is that the chicken will and should float as its nearly completed cooking. finish it off by looking for the "right" Amt. of browning which is prob about 5mins after floating occurs. You shouldn't have to change the temperature of the oil, start it at the temperature you've been turning it down to. You want a medium rolling boil in the oil. Hopefully this helps, unfortunately I can not give up all my secrets, I have to keep the treasures for my next visit! Another technique you can try is soaking/marinating the chicken in buttermilk for overnight. Season the buttermilk with you're favorite spices. Once the chicken is removed from the bath, egg wash, flour and or panko coat the chicken. Andddddd with these above suggestions finish the chicken with a light sprinkling of fine sea salt immediately after removing from the fryer, while it rests! Let me know what you guys think ;)

Glad you asked. The Korean sweet ones were your normal fried chickens (savory) covered usually with a sweet/chilli sauce as you might recall from Gami, so it’s not all sweet it’s usually mixed with another flavor like chilli and it’s also more like a bbq sauce texture. On the other hand, The Merrywell seems to have the chicken marinated (most probably) then cooked. its more like sweet chicken all over, even the meat tasted sweet.

Honey chicken and chocolate waffles? Not traditional southern style Melbournites! Seems like a low rating, but I guess that can be attributed to the honey flavoring and drines womp! In any case didnt you guys have a sweet style fried chicken at the last place? How would you say the two "sauces" or preparations compare as far as sweet fried chicken goes?
